Cascaveaua

A special cheese which is neither Cas nor Cascaval. Made from fresh milk, you prepare the Cas (boiling the milk untill it coagulates into one tipe of cheese), than you cut it into pieces and boil it again, work with it in a process similar to mozzarella and finally put it on a bed of salt and out in the smoker.
